A Couple of Recipes

A while back {ok - it was almost a year ago, but whose counting} my cousin Wendy came for a visit. We met at a park and the kids played for a good long time and when it came lunch time, I suggested that we come back to my house for lunch. We made sandwiches for the kiddo's (we have 4 kids a piece) and I served leftover Chinese Chicken Salad to she and her husband. Her husband loved it and she asked for the recipe. This is a recipe that I got from a sweet friend from church who is an amazing cook!! SO, finally after almost a year, here is the recipe.



Ellen's Chinese Chicken Salad




Marinate:




4 poached chicken breasts, shredded {sometimes I chop it}


1 bunch cilantro, chopped


1 can sliced water chestnuts


1 13.5 oz bottle Peanut Sauce




Poach the chicken and shred while warm. Add Peanut Sauce. Add water chestnuts and cilantro and mix all together in a bowl. Let it cool and then refrigerate. It's best when allowed to sit in the fridge for a couple of hours to allow the flavors to meld.




RIGHT BEFORE SERVING TOSS IN:




1 red bell pepper, finely diced


2-3 stalks of celery, finely diced


1 large bunch of green onions, thinly sliced


1-2 cups of bean sprouts


1 napa cabbage, shredded


1-2 heads of Romaine lettuce, shredded






Top with:


Chow mein noodles


chopped peanuts




Serves: 8




I also wanted to share a recipe for something entirely different. It's a recipe for NO MORE WHINING!!!! The whining and my house has been uncontrollable lately. I'm serious. Out. of. Hand. My sweet friend, Kandi, dropped this off for me today....








I've had it a total of 2 hours and I'm already employing it. I love Ginger Plowman's book, Don't Make Me Count To Three, so I am looking forward to doing this. I think summer {school is out in just 2 more days} will be the perfect time to get started on this. Hopefully by the time school starts back we will be a whine free household. Of course, we only have 6 weeks so we will see. I will let you know how things go.

  1. I would love to know more about both books. Email me if you have a chance. I think they could be useful tools for weekday parents and this Mimi. Hope everyone is doing well. Can't wait to try to chicken salad recipe.
